3 Ways to Use Georgia Blueberries

Did you know that Georgia ranks 4th in the nation in blueberry production? Farmers harvest blueberries from May through July and the tiny berries are called "superfood" because they are full of vitamins and minerals. The blueberry is one of the only wildly sold fruits that is native to North America and were once called "star fruits" because of the five-pointed star shape that forms at the blossom end of the berry. 

Blueberries contribute $449.4 million to Georgia's economy and are a favorite in the kitchen. You can find blueberries near you at one of our Certified Farm Markets, then use them in one of the three recipes below.  

Blueberry Lemon Cake 

 

Requested frequently, this layered cake marries the flavors of Georgia blueberries and citrus with a smooth cream cheese frosting. It definitely earns the recognition of top crowd pleasing dessert and will become a favorite in your home too. 

Ingredients

  • 1 cup unsalted butter (softened)
  • 1 1/4 cup of sugar
  • 1/2 cup of brown sugar
  • 4 large eggs (room temperature)
  • 1 tbsp vanilla 
  • 3 cups all purpose flour 
  • 1 tbsp baking powder 
  • 1/2 tsp salt 
  • 1 cup buttermilk 
  • zest and juice of 3 lemons 
  • 1 1/2 cup of blueberries 
  • 1 tbsp of all purpose flour

  • 1 cup of Georgia grown blueberries 
  • 1 tbsp of fresh squeezed lemon juice (about 1/2 a lemon)
  • 1/4 cup of balsamic vinegar 
  • 1/2 cup of olive oil
  • 3 tbsps of honey from Georgia 
  • salt and pepper to taste

  • 1 cup of sugar
  • 2 tbsps of cornstarch
  • 1 cup of water
  • 1 cup of blueberries
  • 1 tbsp of unsalted butter
