Are you in search of an easy cookie to use for the annual cookie swap? Not only does this cookie melt in your mouth, it will fool your friends into thinking you spent hours in the kitchen preparing them. They are also freezable so you can make them well in advance of your event. If you can’t meet with your group in person this year, no worries, these cookies can easily be mailed to family and friends. 

Raspberry Almond Shortbread Thumbprint Cookies

Ingredients

For the cookie dough:

2 cups all-purpose flour

2 teaspoons cornstarch

¼ teaspoon salt

1 cup unsalted butter

2/3 cup granulated sugar

¼ teaspoon almond extract

½ cup seedless raspberry jam

For the glaze:

1 cup powdered sugar

2/3 teaspoons water

½ teaspoon almond extract
