No-Bake Pecan Pie Truffles

Pecan Pie is a staple on most holiday tables. If you're looking for all of the flavor from traditional Pecan Pie, but don't want to wait on the oven to ding these little bites are just for you. These no-bake truffles will keep your guests coming back for more. 

 

Ingredients

  • 2 1/2 cups of pecans

  • 1 cup of vanilla wafer cookies

  • 3/4 cup light brown sugar, packed

  • 1/2 cup of light corn syrup

  • 1 teaspoon of pure vanilla extract

  • 10 ounces of white chocolate melting wafers

  • 10 ounces of milk chocolate melting wafers

  • 40 pecan halves

 

Directions 

  1. Pulse pecans and vanilla wafer cookies in a food processor until fine crumbs. 

  2. Add brown sugar, corn syrup, vanilla extract and crumbs into a mixing bowl. Mix with a spoon until combined. 

  3. Roll one tablespoon of the mixture with your hands into a small ball. Place on a baking sheet, lined with parchment paper. Repeat until all of the mixture has been rolled into balls. 

  4. Transfer baking sheet into the freezer for 30 minutes. 

  5. Melt chocolate wafers in separate bowls according to their package instructions. 

  6. Using a toothpick, dip cold truffles into either the white chocolate or milk chocolate. Tap side of bowl to remove excess. Place on parchment paper, remove toothpick and place pecan half over toothpick hole.
