TURKEY POT PIE

 

 

1 tablespoon butter

1/2 cup chopped onions

1/2 cup chopped celery

3 cups cooked chopped turkey (or chicken)

1 can cream of potato soup

1 cup peas and carrots

1/2 cup milk

1 teaspoon garlic

1 teaspoon basil

Salt and pepper to taste

1/2 cup grated cheddar cheese

2 unbaked pie crusts

 

Preheat oven to 350º.

 

Place one pie crust in bottom of a deep dish pie plate and set aside. 

 

Sautee onions and celery in butter, then stir in remaining ingredients except cheese.

 

Gently pour mixture into pie crust, then top with cheese. Place remaining pie crust on top and crimp edges. Make a few slits in top crust to vent. 

 

Bake for 30 minutes or until crust is golden brown.

 

Allow to cool slightly before serving.

 

 

Serves 4-6
