STRAWBERRY ZUCCHINI BREAD

 

 

3 eggs, beaten

1 cup vegetable oil

1 tablespoon vanilla

2 1/4 cups sugar

2 cups shredded zucchini

3 cups flour

1 teaspoon salt

1 teaspoon baking powder

1/4 teaspoon baking soda

1 tablespoon cinnamon

2 cups chopped strawberries

1 cup chopped pecans

 

 

 

Preheat oven to 350º.

 

Lightly grease 5 mini loaf pans.


In a large bowl beat together eggs, oil, vanilla and sugar.

 

Fold in zucchini, then stir in flour, salt, baking powder, soda and cinnamon.

 

Fold in strawberries and pecans. 

 

Fill loaf pans 3/4 full. 

 

Bake for 50 minutes.

 

Cool before removing from pans.
