STRAWBERRY SHORTCAKE

 

 

Strawberry Shortcake

 

 

SHORTBREAD SHORTCAKES

 

2 cups all purpose baking mix (such as Jiffy)

2 tablespoons sugar

3 tablespoons shortening, melted

1/2 cup heavy whipping cream

 

 

WHIPPED CREAM

 

1 cup heavy cream, chilled

1/4 cup sugar

1 teaspoon vanilla

 

For the Shortcakes

 

Preheat oven to 450º

 

Combine all ingredients. On a floured surface, roll dough to 1/2 inch. Using a 2-inch cutter, cut out shortcakes.
Bake on ungreased baking sheet for 10 minutes until lightly browned. Do not overcook.


Serve with fresh Georgia strawberries(sweetened if necessary)

 

Makes 12 to 13

 

 

For the Whipped Cream

 

Chill a medium metal bowl and beaters.

 

When chilled, pour cold cream into bowl and beat until almost stiff.  Add sugar and vanilla; beat until cream holds peaks.


Use as a topping for pies, cobblers or top fresh fruit with a dollop.
