SAUSAGE BREAKFAST PIE
1 pound pork sausage
2 deep-dish frozen pie crusts
2 cups shredded sharp cheddar cheese
2 cups whole milk
Chopped spring onions (optional)
Brown and drain sausage. Place 1/2 sausage in bottom of each pie crust. If using onions, add them to top of sausage. Top each with 1 cup of cheese.
In bowl, beat eggs. Add milk to eggs and stir thoroughly. Pour 1/2 of egg mixture over each pie.
Bake at 300º approximately 45 minutes to 1 hour. Pies will be firm - not jiggly - when done.
Note: Check about halfway through cooking time to see if a rim of aluminum foil is needed to protect pie crusts from over-browning.
