OVEN ROASTED SWEET POTATOES

 

 

4 sweet potatoes, peeled and cubed
1 cup chopped Georgia pecans
1/4 cup olive oil
2 tablespoons crushed red pepper flakes
1 teaspoon salt

 

 

 

Preheat oven to 400º.

 

Coat a shallow baking pan with olive oil. Stir in potatoes, pecans, pepper flakes and salt. Mix until the potatoes are well coated. 

 

Bake for 30 minutes or until potatoes are soft.  Stir half way through cooking to make sure the potatoes are coated evenly.

 

Makes 4 servings.
