RAMEKIN BAKED EGGS
1 tablespoon cooked crumbled bacon, sausage or ham
1 tablespoon chopped tomato
1 tablespoon + 1 teaspoon shredded cheddar cheese
1/4 teaspoon fresh chopped basil
1 teaspoon cream
Salt and pepper to taste
Butter for coating cups
Preheat oven to 350º.
Coat a 6-ounce ramekin or Pyrex custard cup with cooking spray and spread a little butter around inside of cup. In the bottom of the cup, layer meat, tomato, cheese and basil. Gently crack 1 egg on top of ingredients, but do not stir. Pour cream over egg and salt and pepper.
Line a baking sheet with a dampened dish towel to prevent cups from slipping. Place desired number of cups on baking sheet and bake for 20 minutes or until bubbly. Serve in the cup.
This recipe is for one 6-ounce cup, so increase your ingredients according to how many you are preparing.
You can substitute any meat and vegetable as long as the mixture includes about 3 tablespoons of ingredients.
