1 prime rib roast (allow 1/2 ib. of meat per person)
Salt and pepper
1 cup sour cream
2-3 tablespoons hot horseradish (more or less to taste)
1 tablespoon mayonnaise
Take roast out of refrigerator 1 hour before cooking. Preheat oven to 500º.
Place roast in a roasting pan rib side down, and generously salt and pepper roast. Place in preheated oven and turn temperature to 350º.
Bake roast for 20 minutes per pound or until internal temperature is 130º for rare. Cook longer for more done roast.
Serve with horseradish sauce.
For Horseradish Sauce:
Combine all ingredients and adjust flavors as needed. Refrigerate until ready to serve.
