2 (20 ounce) cans pineapple chunks, drained but save juice
6 tbsp self-rising flour
1 cup sugar
10 ounces sharp Cheddar cheese, shredded
1 sleeve round buttery crackers, crushed
1 stick margarine
Place pineapple in 2-quart casserole dish, and add 1/2 cup pineapple juice. Mix flour and sugar together, and add to pineapple. Mix cheese and crackers together, and place on top of pineapple. Melt margarine and pour over top of casserole.
Bake at 350º for 30 minutes.
Serve with salad and cornbread for a complete meal.
