PECAN CHEESE RING
2 cups shredded sharp cheddar cheese
2 cups shredded mild cheddar cheese
1/2 cup mayonnaise
1/4 cup finely chopped onion
1/2 teaspoon cayenne pepper
3/4 cup chopped pecans
Combine all ingredients except preserves and crackers, them transfer to a ring mold. (If you do not have a ring mold, use a cake pan lined with plastic wrap and a small bowl lined with plastic wrap for the ring.)
Press to shape, then refrigerate several hours until ready to use.
Invert onto a plate, place a small amount of strawberry preserves in center and serve. Serve with assorted crackers.
