FRIED GREEN TOMATOES WITH GEORGIA PEACH PEPPER SAUCE
FRIED GREEN TOMATOES
4 large green tomatoes, sliced in 1/4-inch slices
1 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1/2 cup buttermilk
2 eggs, beaten
3/4 cup Panko bread crumbs
3/4 cup cornmeal
PEACH PEPPER SAUCE
1/2 cup red pepper jelly
3/4 cup chopped Georgia Peaches
1 teaspoon Creole mustard
2 teaspoons horseradish
For the Tomatoes
On a large plate combine flour, salt, pepper and cayenne pepper. In a bowl combine eggs and buttermilk. On another large plate combine Panko and cornmeal.
Dredge tomato slices in flour mixture, then egg mixture, and then gently coat with cornmeal mixture.
Pour about 1/4 inch oil in a large frying pan and heat. Slowly place 4 to 5 tomato slices into hot oil, being careful not to crowd them in the pan. Cook about 2-3 minutes per side, until golden brown.
Place on paper towels to drain.
For the Peach Pepper Sauce
Combine all ingredients in a small saucepan and simmer 5 minutes. Remove from heat and allow to cool to room temperature. Serve with fried green tomatoes.
This sauce is also excellent on pork.
