CIDER BRAISED KALE, BACON & VIDALIA ONIONS

 

 

1 kale bunch (washed well, destemmed and chopped)

1 tablespoon pecan or olive oil

3 slices thick-cut bacon (chopped)

1 Vidalia Onion (chopped)

1 cup apple cider

Salt & pepper

 

 

 

Heat pecan oil in skillet.

 

Add bacon and cook until crisp, then add onion and cook until wilted.


Add kale, apple cider, salt and pepper.  Bring to a boil, then reduce to simmer.

 

Cover and cook 5-10 minutes, until soft and color changes.

 

Serves 4-6.
